Easter Fruit Buns.

Ingredients: 450g plain flour sifted. 1 tsp caster sugar. 1 tbsp dried yeast. 150ml full cream milk warm. 1 tsp mixed spice. 1 tsp salt. 1 tsp cinnamon. 50g caster sugar. 50g melted butter. 1 egg beaten. 50g currants. 2550g chopped mixed peel. Glaze dissolve 1 teaspoon caster sugar in 1 tablespoon of warm milk. Preparation: 1.n a medium sized bowl, put 125g of flour with one teaspoon I of caster sugar, add the yeast and warm milk. Beat with a fork until batter-like. Leave in a warm place until well risen and frothy. If necessary put the bowl in the oven on the lowest possible heat to hasten the rising. 2. Meanwhile, put the rest of the flour, sugar, spice and salt into the main processor bowl with dough blade. Sprinkle in the currants and mixed peel. 3. hen the yeast mixture has risen, add the melted butter and W beaten egg. 4. witch the machine on and slowly pour in the yeast mixture. S When the mix pulls into a dough consistency turn off machine. This takes approximately 1012 secs. If the mix is too wet, sprinkle with flour and lightly pulse until light dough is achieved. 5. ith lightly floured hands, form the dough into 12 smooth balls. W Place on lightly greased and floured baking sheet. Set the balls apart but close enough that they will push together when risen.
