Temperatures too cool or too high can affect the way the bread rises and bakes. Last, its a good idea to start with all new, fresh ingredients (especially fresh flour and yeast). Now, lets try a simple (but really good) recipe.
Traditional White Bread 2 lb. loaf
1 + 1/3 cups water 4 teaspoons softened butter or margarine 4 cups bread flour 2 tablespoons sugar 4 teaspoons dry milk 2 teaspoons salt 2 teaspoons active dry yeast
Carefully measure 1 and 1/3 cups water. Remember, use water that is room temperature. DO NOT use very hot or very cold water. Its a good idea to view the measuring cup at eye level to make sure you have measured exactly 1 and 1/3 cups. Pour the water into the bread pan.
Carefully measure 4 teaspoons of butter or margarine that is at room temperature. Add this to the bread pan.
This takes care of all of the liquid ingredients for the recipe. Next come the dry ingredients.
Measure 4 cups of bread flour. Make sure not to overpack the flour into the cup. To avoid over packing, a good trick is to fill the measuring cup to overflowing, then tap the side of the cup with a knife or spatula to remove air pockets. Level off the measuring cup with the knife or spatula. Pour the flour into the bread pan. Measure 2 tablespoons of sugar. Again, make sure to level off the tablespoons for an exact measurement. Add the sugar into the bread pan. Measure 4 teaspoons of dry milk. Level off the teaspoons of dry milk like all of the rest of the dry ingredients. Add the dry milk to the bread pan. Measure 2 teaspoons of salt. It is especially important to measure the salt precisely because too much salt, even a little, can affect the rising of the dough. Add the salt to the bread pan. Before adding the yeast, use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure (again, leveling off) 2 teaspoons of yeast and carefully pour it into the well you made in the flour.
Carefully snap the baking pan into the breadmaker.
the lid 10 Closeinto the of the bread machine and plug the power cord wall outlet. The following things will happen. The machine will beep, and the lights of the display will turn on. The time setting will say 3:00 hours.
Repeatedly press the Crust Color button to select the kind of crust you want. For this recipe we recommend Medium. Depending on the crust color you select, the arrow will be pointing to either light, medium or dark. As you press crust color, the display will temporarily read:

3 :0 0

Light: 1L Medium: 1P Dark: 1H Press the Crust Color button until IP (medium) temporarily appears in the display window.
and your machine will start 12 Press the Start/Stop buttonthe breadmaker begin to making bread. You will hear mix the ingredients. Important: Do NOT press the Start/Stop button while the breadmaker is making bread. If you do, the machine will turn off and you will need to start over again, from scratch. Important: You should not raise the lid for this recipe. (For other recipes you try later, you will need to raise the lid to add nuts, fruits, or other ingredients.) Caution: The breadmaker is very hot. Do not handle the machine while its operating. Do NOT lift the lid while the breadmaker is baking bread.

Display The Display shows the following settings: The number of the bread setting cycle The crust color setting The time remaining while your bread is kneading and baking Once you press the Start/Stop button the display will show the remaining time until your bread is baked. When the display reads 0:00 the bread is baked.
Timer Set buttons Press these buttons to delay the time for your breadmaker to start. For example, you can time your bread to be ready for dinner, or to bake while you are sleeping. (To learn how to use this feature, please see Chapter 5: Using the Delay Timer on page 23.)
Start/Stop button Press this button to start and stop your breadmaker. Important: Do not press Stop when making bread because this will cancel the entire cycle and you will need to start from scratch.

Breadmaker Settings

Your breadmaker can bake almost any kind of bread. We provide recipes that clearly show you which setting you should use. 1. 2. 3. 4. 5. 6. 7. 8. Basic (Time: 3 hours) Whole Wheat (Time: 3 hours, 40 minutes) French (Time: 3 hours, 50 minutes) Sweet (Time: 2 hours, 50 minutes) EXPRESSBAKE (Time: 58 minutes) EXPRESSBAKE (Time: 1 hour, 20 minutes) Dough (Time: 1 hour, 30 minutes) Bake (Time: 1 hour) Basic This setting is probably used more than any other because it gives you the best results with just about any recipe.
Whole Wheat The whole wheat setting offers a longer rise time for breads that contain more than 50% whole wheat flour.
French Use this setting for making French breads. French bread takes longer to knead, rise, and bake, providing a heartier crust.
Sweet The sweet setting is for baking breads with high amounts of sugar, fats, and proteins, all of which tend to increase browning.
EXPRESSBAKE (58 minutes) Use this setting to for baking bread in under one hour. (please see page 16).
EXPRESSBAKE (80 minutes) Use this setting to quickly bake larger loaves of bread (please see page 16).
Dough This setting lets you prepare dough for rolls, specialty breads, pizza, etc. which you shape by hand, allow to rise, then bake in a conventional oven.
Bake This setting is for making dough or jams.
Setting: Making Bread In Under 1
Your breadmaker can bake great bread in under 1 hour. setting. settings. Try all the different settings to see which of them you prefer.

This is called the

setting loaves are a little different from loaves baked on

There are two

settings:

One setting can bake bread in 58 minutes. The bread is a little more dense in texture with this setting.
The other setting is for baking loaves in 1 hour 20 minutes. The loaves baked with this setting are a little taller and more airy than the 58 minute breads.
There are a few things you should know about the different than the other settings.

settings that are

setting breads tend to have a darker, thicker crust than other kinds of bread. Sometimes there wilt be a crack in the top of the crust. This is because baking is done at higher temperatures. They also tend to be shorter, denser loaves. -You CANNOT use the Delay Timer for the settings. This would coot the liquid ingredients and affect the way that the bread rises. -You CANNOT use the Crust Color buttons for setting breads. DO NOT open the cover white making setting breads. If the loaf is hard to remove from the pan, sit for about 5 minutes to coot. Gently shake the bread out of the pan and wait for 15 minutes before slicing. If you wish to bake another Loaf of bread, you must let the breadmaker coot for 20 minutes with the cover open.
If you wish to bake another loaf of bread, you must let the breadmaker cool for 20 minutes with the cover open. YOU CAN use standard bread mixes for EXPRESSBAKE setting breads, but the results may not be as good as the results when using your Oster Breadmaker recipes within this book.
EXPRESSBAKE Setting Tips and Hints
Always use a fast rising yeast like Red Star QuickRise yeast. DO NOT use active dry yeast for EXPRESSBAKE settings because the loaves will be much shorter when baked.

Liquids

Always use hot water in the range of 115125 F. You must use a cooking thermometer to gauge the temperature; hotter water can kill the yeast while cooler water may not activate it.
As a rule, you should use LESS salt for EXPRESSBAKE setting breads. Less salt provides you with a higher loaf. Make sure to follow your Oster Breadmaker recipe suggestions for best results.

Other Ingredients

Make sure all other ingredients (like flour, sugar, dry milk, butter, etc.) are at room temperature. Always use bread flour for the EXPRESSBAKE settings.
Things You May Need to Buy
You should only use Bread Machine flour for the EXPRESSBAKE setting recipes.
You may need a cooking thermometer to measure the temperature of the water you use in these recipes. You should only use hot water (between 115 and 125 F) for EXPRESSBAKE setting recipes. Although baking EXPRESSBAKE setting breads is a little different, the results and convenience are well worth it. The following recipe is a great one to try for your first EXPRESSBAKE setting loaf.
1 1/2 lb. Traditional White Bread
1 cup and 2 tablespoons (9 ounces total) of hot water (115125 F) 2 tablespoons oil (room temperature) 2 tablespoons sugar 1 teaspoon salt 3 cups Bread Machine flour 41/2 teaspoons Red Star QuickRise yeast

You can delay the time your breadmaker starts to have fresh bread ready when you get up in the morning or when you come from work. We recommend that before you use the Delay Timer, you try out a few recipes. Use recipes that have produced good results for you in the past. Important: You cannot use the Delay Timer for EXPRESSBAKE settings. Before using the Delay Timer:
Add all of the ingredients of the recipe. Select the correct setting for the kind of bread you are making (French, Sweet, etc.). Select the crust color.
Caution: Do not use recipes with ingredients that can spoil like eggs or milk.

To Use the Delay Timer:

flgure out how many hours and minutes there are between now and when you want final, baked bread. For example, if it is 8:00 AM and you want bread ready for dinner at PM, that is 10 hours. Use the Timer Up button to advance the time In 10 minute increments. in our example, you will do this until the timer reads if necessary, use the Timer Down button to decrease the time. advance the time quickly. simply press and hold down the Timer Up/Down buttons.) important: if you make a mistake or wish over, press and hold down the Start/Stop button until you hear a beep. The display willshow the original setting and cycle time. The Delay Timer is canceled and you can start again. When the Delay Timer is set where you want it, make sure to press the Start/Stop button. The colon will flash and your bread will be ready when you planned. important: When using the Delay Timer during times of hot weather, you may wish to reduce the liquid in your recipe by 1 or 2 tablespoons. This is to prevent the dough from rising too much. You may also reduce the salt by or teaspoons and try cutting the amount of sugar you use by teaspoon at a time.

Tips and Hints

Experienced cooks consider breadmaking to be as much of an art as a science. Keep in mind that some recipes may require a little experimentation before they are exactly the way you want them. Just dont give up. Still, there are special hints to ensuring quality bread almost every time.

Use Exact Measurements

Weve already mentioned how important it is to use exact measurements when baking bread, but it should be said again. Level off all dry ingredients and make sure that all liquid ingredients are measured in a glass cup with the markings clearly labeled on the side.

Measurement Equivalency Chart Getting Started
The following chart will help you convert measurements used in the recipes. For example: 1/2 tablespoon = 1 + 1/2 teaspoons
Fluid Ounce(s) = = = = = = = = Cup(s) 1 7/8 3/4 5/8 1/2 3/8 1/4 1/8 = = = = = = = = Tablespoon(s) 1 1/2 = = = = = = = = = = Teaspoon(s) and 1/2
Taking Care of Your Bread Machine
Caution: Do not put the breadmaker in water or in a dishwasher. Do not use benzene, scrubbing brushes, or chemical cleaners as these will damage the machine. Use only a mild, non-abrasive cleaner to clean the breadmaker.

General cleaning

Remove all bread crumbs by wiping them away with a slightly damp cloth. DO NOT bend the heating element which is located on the inside of the breadmaker.
Cleaning the baking pan and kneading blade
Wipe the baking pan and kneading blade with a damp cloth and dry completely. DO NOT wash the pan or parts in the dishwasher. This will damage the finish of the pan and the other parts.
Caring for your breadmaker
Keep your breadmaker clean at all times. Caution: Do not use metal utensils with the breadmaker. This will damage the non-stick pan and other parts.
Dont worry if the color of the bread pan changes over time. The color change is a result of steam and other moisture and does not affect the machines performance. If you have trouble removing the kneading blade, place warm water in the bread pan for 1015 minutes and this will loosen the blade.

Storing your breadmaker

Make sure the machine is clean and dry before storing. Store the breadmaker with the lid closed. Do not place heavy objects on the lid. Remove the kneading blade and place inside the bread pan.
Troubleshooting Getting Started
If you experience difficulties when operating the breadmaker, review the troubleshooting information in this section to find a solution. If you are unable to find a solution, please call our Consumer Relations Department at 1(800)526-2832.
If you have a power outage
If the power goes out while you are using your breadmaker, the display will go blank. If the breadmaker is kneading the bread, you can restart the machine and continue. If the machine is baking bread, either finish baking the bread in an oven or start from scratch with a new loaf. When the power comes back on, you should do the following:
Hold down the Start/Stop button for at least 3 seconds. If the display does not return to the time setting before the outage, unplug the breadmaker and then plug it back in. If the machine still does not start, hold down the Start/Stop button a second time for 3 seconds. Continue to unplug and replug the machine and hold down the Start/Stop button until the display returns to the cycle time before the power outage.

SNO W JOBS
CHARLTON Although 2009 was filled with many unfortunate occurrences, some residents look back on it fondly. For some, being at peace with themselves was fulfillment enough. For others, erasing financial debt made the year great. Maggie, a Charlton resident who did not give her last name, said 2009 was a great year for her because religion filled her with joy. I was spiritually centered. I connected everyday with God, she said as she pumped gasoline at the Teds Citgo station on Route 20 Thursday Dec. , 31. The past year was also a joy for Charltons Jean Anderson. I just enjoy every day she , said. I dont have any credit card debt.

LIBRARY RETURNS TO

REGULAR HOURS
CHARLTON The twoweek closing of Town Hall and the reduced hours at the library went well, according to several town officials. Overall, I think that the planning of department heads made this go smoothly said Town Administrator , Robin L. Craver. It is a quiet time of year. No serious issues arose at either building, both of
which re-opened Monday, Jan. 4, according to Craver and Library Director Cheryl Hansen. One glitch did arise when nobody from the Board of Registrars showed up at the police station Wednesday, Dec. 30 to deal with residents seeking to register to vote, according to Police Chief James A. Pervier. It was the last to register to vote in the Tuesday Jan. 19 special U.S. ,

Bay Path to skip on grant

Bay Path School Committee member Olaf Garcia records notes during the groups Monday meeting.
CHARLTON The Bay Path School Committee Monday night passed on signing an agreement that would make them eligible for federal education funding. In a 12-6 vote, the committee declined to sign a memo with the state Department of Elementary and Secondary Education, which is applying for the grant, that could have seen them receive up to $27,000 from the federal Race to The Top grant program. Memo submissions are due Wednesday Jan. 13. , The funny thing is, were all having trouble understanding it, Bay Path Superintendent David Papagni said of one of his concerns over the program. The federal grant program, funded through the presidents economic stimulus plan, would give money to local school dis-

original plans, which voters rejected, called for a larger space within two separate buildings. The town has $300,000 to spend on the project from a separate attempt years ago. The building will be located adjacent the Flint Road landfill, which is currently being capped. The design includes one building spanning 13,600 square feet on a 1.8-acre site, with maintenance and wash bays. A Proposition 2 1/2 debt exclusion will pay for the project. An additional $44.20 will be tacked onto annual property tax bills for the next 20 years. Highway Superintendent Gerry Foskett, who is on the committee, did not respond to several voicemails. The progress comes in the wake of controversy and after much effort was expended in seeking the projects approval. Residents initially balked at the $3.5 million cost estimates. One example of their concern: Anywhere from 15 to 35 percent of the costs could be from prevailing wage, according to Weston and Sampson Team Leader Jeff Alberti, whose firm designed the building.
As a result, the town pared the project down to the current figure. At the same time, selectmen repeatedly urged residents to approve the project, citing the currently highway buildings poor conditions. The Highway Department currently operates out of a dilapidated facility an old 1940s , military hut on North Main Street with leaks in the roof. The state Department of Environmental Protection several years ago issued an order to clean up the site after a petroleum spill. Last January selectmen started exploring , new ways to get the facility built. They considered buying a building to house the department on H. Putnam Road, but Foskett cautioned against that, saying an access road in out and out of there would be too dangerous. After that, Selectman Peter J. Boria suggested seeking approval of a cost estimate only , getting it approved, then proceeding with more detailed design plans. NEWS BRIEFS

Charlton man takes over Charlton couples at Allied Appraisal son-in-law returns WORCESTER Allied Appraisal from Iraq

Associates of New England, Inc. has announced a transition in ownership. The Worcester based full-service real estate appraisal firm offering residential, commercial and industrial appraisals and consultation has been serving Worcester and the surrounding area since 1979. The companys new owner and president, John T. Peculis of Charlton, brings to the corporation a bachelors degree in management from Nichols College, as well as a diverse background in both real estate and finance. Former president and owner Daniel E. Jalbert, MAI is excited about watching the next generation gain control: This transition will enable the company to achieve an even greater appeal within the market. Although Mr. Jalbert has relinquished daily control of the company he will remain active , within organization as a consultant and commercial reviewer. A related announcement comes on the heels of the ownership change: Allied has moved operations to 108 Shrewsbury St. after almost 30 years downtown on Main Street. Mr. Peculis, explaining the move, states: This change in location was necessary for the company to continue to grow. The new address signifies Allieds constant forward progress in the industry Shrewsbury Street is on the cut. ting edge of commercial development after considering many different neighborhoods, this one really stood out. Submitted by Allied Appraisal Associates of New England, Inc. Army National Guard Master Sgt. Craig R. Chapman has returned to the U.S. after being deployed overseas at a forward operating base in support of Operation Iraqi Freedom. Operation Iraqi Freedom is the official name given to military operations involving members of the U.S. armed forces and coalition forces participating in efforts to free and secure Iraq. Mission objectives focus on force protection, peacekeeping, stabilization, security and counter-insurgency operations as the Iraqi transitional governing bodies assume full sovereign powers to govern the peoples of Iraq. Members from all branches of the U.S. military and multinational forces are also assisting in rebuilding Iraqs economic and governmental infrastructure, and training and preparing Iraqi military and security forces to assume full authority and responsibility in defending and preserving Iraqs sovereignty and independence as a democracy. Chapman, a military police platoon sergeant, is a member of the 772nd Military Police Company, based in Taunton, Mass. He has 22 years of military service. He is the son of Renwick and Jacqueline Chapman of Westlake Drive, Taunton. His wife, Kristie, is the daughter of Francis and Patricia Burke of Northside Road, Charlton. The master sergeant graduated in 1998 from Bishop Freeman High School, Attleboro, and earned a bachelors degree in 2003 from Newberry College, Brookline.

difficult approach. The board should have a short discussion about those changes and comply as we always comply with the Open Meeting Law, Selectman Scott D. Brown said, laughing as he finished his sentence. Boria said volunteers who serve on boards should not be asked to read the entire statute because it is too time consuming. The chairman, meanwhile, offered little on the subject adding he had nothing to say on it right now, because he said he had no information. The town will be distributing new copies of the law to all employees, requiring they read and sign an acknowledgment of it, according to Craver. There is a lot to learn. State lawmakers passed a new version of the bill last year, which makes several significant changes to the law. The state attorney Generals Office will now enforce the law statewide, whereas they only enforced it against state governmental bodies now. The local district attorneys office currently enforces the statute. Another changes clarifies that a quorum of one board can attend a meeting of another body but only discuss the , latter boards business. Prior to the new law, interpretations of
the statute prohibited the former board from speaking at all, unless they had posted a meeting. Another change requires boards to state the specific topic and purpose they are going into executive (closed door) session, without compromising the meetings purpose. The prior version only required boards to cite one of the broadly worded exemptions that allow them to meet behind closed doors. The AGs office said it was in the process of developing new training materials for officials, according to spokesman Jill Butterworth. They plan to offer the documents on their Web site prior to July As for seminars:. At the request of municipalities and municipal organizations, the office will do its best to accommodate requests for seminars/conferences, including utilizing online training opportunities, with community officials, Butterworth wrote in an e-mail. The new law could change how selectmen handle concerns over any potentially illegal meeting. With several citations under their belt, Walker said the law could make selectmen more cautious. I think the board is now uneasy enough that they will err on the side of caution, she said.
Walker suggested selectmen stop a meeting and ask for a legal opinion if any concerns over the law arise during one, and ask for a legal opinion. Planning for the new law comes after the DAs office recently determined selectmen violated the Open Meeting Law in creating Cravers 2009 violation. The private one-on-one meetings each selectman held with Craver broke the law, according to the DA. The violations marked the boards fourth in two years and third straight in reviewing Craver. The DAs office cited selectmen twice previously in formulating Cravers review in private. Selectmen, however, have loudly complained about the latest violation, saying they asked the DAs office for legal advice on the review policy They have also said. they disagree with the DAs interpretation of the law. A DA spokesman, in response, said the town should heed the advice that has accompanied prior citations. Snowstorm means work and a lot of fun
CHARLTON A snowstorm that started New Years Eve and continued to drop snow in the area through Sunday afternoon left just enough of the white stuff on the ground to get snowplowers out onto the streets and make residents have to take shovels in hand. It also gave families and children a great excuse to get outside and have a little fun.

Working on the rail trail come spring?
After sitting in limbo for years, it looks like the Southbridge section of the Titanic Rail Trail may actually move forward this spring. Recently Town Manager Christopher Clark , said he plans to draft the required request for proposal paperwork to get the job done specifically taking up the rails and ties and , moving them to either side, followed by compressing the surface so its walkable. One section will also involve fixing a bridge over Lebanon Brook thats now missing some rail ties, he added. The funding will come from two grants that have been sitting in state accounts for some time. One for $200,000 was earmarked by the state legislature for the project; the second, $560,000, came from the federal government. The former has fewer restrictions than the latter, Clark said the most important for trail advocates is the fact the section built with it does not have to adhere to MassHighway design guidelines. Among other things, those require a rail trail to be able to support the
weight of an ambulance, which means the construction process is far more expensive per mile. He noted the former grant is controlled locally, essentially by state Sen. Richard Moore, but the latter contract is already in MassHighways hands. Because both grants are shared between Dudley and Southbridge, the work will be done on that end of town. For Southbridge, most of it will go toward the stretch of the former railbed between the Rotary and the Golden Greek Restaurant, with some going toward a stretch closer to the Dudley line. Not long ago, however, the project got an unrelated boost when Lucille Langlois and Cindy Howard of the Center of Hope indicated their agencys willingness to provide stone dust and other aid to construct a stretch of trail near its facility right on top of the existing rails if nec, essary The agency sees that as a safer alterna. tive than having its clients walk along nearby streets, especially since a car recently grazed one of their clients (without injury) while he was crossing Central Street. In that area, the trails route runs from the

grants purposes, however, Papagni said he participated in a webinar seminar held by state officials, but failed to get clear answers to any questions. They cant answer all the questions about what is going to occur if we get the money , he said. School officials shared concerns and about the grant program, with Papagni noting the grant appears to target underperforming schools, which Bay Path is not considered. We are not in these categories, he said. On the other hand, Papagni acknowledged, tracking educational data would only help the district, although the school would be required to spend the same amount in future years, after the grant ended. Tracking is always a good thing for education, he said. But is it worth the money we are going to have to spend? The superintendent also
expressed concern over having just 90 days to formulate a spending plan if the school received the funding. Still, Papagni wondered how the school would look if it chose not to sign the agreement. We dont want to be perceived as wanting to play ball, he said. The top-down approach the DESE is taking to the grant bothered Business Manager John LaFleche. I dislike imposition from the top saying this is how you are going to do things, he said.
We have been looking at it for the next couple of years. We are very optimistic. This is really exciting, he said. Medical areas are still strong in the business market. There is definite need in southern Worcester County.

MONEY/CONTESTS

The committee on Monday also accepted several cash donations, including $50 from Wal-Mart for the BattleBotsIQ program, and approved the participation of 14 students in the National BattleBots Competition from April 6-11. The contest will be held on Mare Island in San Francisco, Calif. Additionally the committee , accepted a $5,000 Ultimate Collision Education Makeover grant. The next meeting of the Bay Path School Committee is Monday Feb. 7 at 7 p.m. , Ryan Grannan-Doll can be reached by phone at (508) 9094050, or by e-mail at rgrand@stonebridgepress.com

NEW PROGRAM

In other business Monday , Papagni announced the school is in the first steps off developing a new pharmacy technician and medical assistance program in partnership with Boston Reed College. The school would receive a monetary commission for each student enrolled. Classes would be held at the school. Bay Path is looking to start the program this fall.
